For the past couple of Valentine’s Days, my boyfriend and I chose to stay in and cook together, making a romantic meal for two. This year, we opted for chicken and white bean enchiladas with creamy salsa verde, the recipe of which I found via Pinterest and courtesy of Gina’s Skinny Recipes at SkinnyTaste.com.
The recipe was very easy to follow; what I loved most was that it’s a two-person job so one of us made the chicken and white bean filling while the other worked on the sauce. A true team effort, and one that was celebrated with a bottle of champagne. Another plus: there was plenty left over to enjoy the next day for lunch.
